Actually a clean shot through the eye is typically the most humane way, shots through the chest tend to not be as clean or quick kills. Fun fact, and definitely the reason we're all here.
ZZ's right as regards where hunters are advised to aim for clean kills. The heart and lungs represent a relatively large and vulnerable kill zone; not everything on the head would constitute a kill shot and skulls are tough to get through. Center mass, not fancy trickshots that you'll most likely miss and leave a deer wandering around with its jaw blown apart.
