As far as epic fantasy goes:

Really enjoyed Stormlight. Kingkiller chronicles are awesome so far, and I cannot wait for the third book to be released. I found the first couple books of the Wheel of Time series by Robert Jordan to be pretty good.

I'm surprised that no one has mentioned the Dresden Files by Jim Butcher. Very light urban fantasy, and a lot of fun (excluding Ghost Story, which can literally just be skipped)

The Witcher series by Andrzej Sapkowski is pretty good, I definitely recommend The Last Wish
